Pumpkin Spice Protein Bites
The Particulars: I have made these before and it is Pumpkin Spice season...sooo GF Oats, Peanut Butter, Pumpkin Puree, Vanilla Protein Powder, Maple Syrup, Vegan Chocolate Chips, and Pumpkin Pie Spices. Healthy and full of flavor. The perfect snack. (Vegan GF *Contains Nuts)
Cheese Lover Lasagna
The Particulars: This is for all my CHEESE LOVERS! Between the layers of lasagna noodles and fresh Basil leaves, you will find creamy, delicious, rich and decadent layers of different cheeses: Ricotta, Parmesan, Mozzarella, Fontina, Asiago, Provolone, and Mascarpone. This lasagna will make ya weak in the knees. (Vegetarian Nut Free)
Roasted Delicata Squash Salad
The Particulars: ONE OF MY FAVORITE SALADS I wait all year for Delicata Squash! Delicata Squash (Hayes Farm) will be roasted with garlic olive oil and seasoned with Berbere (ber-ber-uh) is an Ethiopian seasoning that is a flavor explosion in your mouth! It is reminiscent of a spicy curry, but has a touch of baking spices, and placed on a bed of Mixed Greens. Quinoa, Pickled Red Onion, Dried Fruit, Candied Walnuts, Goat Cheese Crumbles, and Pumpkin/Hemp Seeds will accompany the squash beautifully. The sweetness of a Maple Roasted Garlic Vinaigrette will be the perfect balance to the medium spicy Berbere squash. (Vegetarian/Vegan GF *contains Nuts)
Chop Salad w/ Thousand Island
The Particulars: Thousand Island is a dressing some shy away from... I am here to tell you to 100% jump on this salad! The fresh veggies, dressing and homemade crunch make this salad seriously fun. Mixed greens and Romaine will be topped with Shredded Cabbage, Chopped Cucumber, Bell Peppers (replaced the carrots this week due to a national recall), Sweet Corn, Tomato, and homemade Salad Crunch (seasoned Sunflower Seeds, Pepitas, Almonds). Now the dressing... Vegan Mayo, Ketchup, Sweet Onion, Vegan Worcestershire, Sweet Pickle Relish, Garlic, ACV, and seasoning will be all whisked together... I promise...It. Is. Amazing! No shame in licking the dressing cup.

The Particulars: This Chili will remind you of the old school meaty, bean filled chili but it is vegan! Chickpea Tomato Coconut Curry
The Particulars: This Flavorful and Fragrant soup would be a perfect addition to your lunch or dinner table. Onions, Garlic, Diced Tomatoes, Chickpeas, Curry, Coconut Milk, Coconut Oil, Lime, a pinch of crushed red pepper all come together in a delicious bowl of goodness. Peanut Butter Miso Cups
The Particulars: Like a Peanut Butter Cup, but so much more... GF Oats will get mixed with Maple Syrup, Peanut Butter, and Miso. The oat mixture will be placed in a muffin cup and topped with an additional creamy sweet/salty Peanut Butter center. Finally a spoonful of Vegan Dark chocolate goes on top to make this a delightfully sinful and healthy snack.

The Classic Chickpea Salad
The Particulars: This salad is so full of flavor you won't need much else! This smashed chickpea salad takes Chickpeas, Dijon, Celery, Yellow Onion, Veganaise, Parsley, Salt & Pepper and smashes it up to the perfect texture. Eat directly from the container, dip with Crackers, or place on a whole grain piece of bread for a more filling option. (Vegan GF Nut Free)
